What Happens When You Cook with Cannabis?

Oils (Tinctures)

Oils, which are usually marketed as tinctures, typically contain just a cannabinoid distillate, an ingestible carrier oil, and possibly, some flavoring. Because the ingredients are so simple, you can use cannabis oils in your recipes. This is also an easy way to go, because you can just pour the desired number of drops of oil directly into the recipe.

Flower

The other, and more traditional option is flower. This can include raw cannabis flower, or cannabis flower that’s been infused with the distillate of another cannabinoid, which is becoming very popular on the market.

With flower, you need to make an infused butter (or any replacement fat, like coconut oil, etc.) To do that, you’ll need to decarboxylate the flower buds first. Coarsely grind 2 cups of cannabis flower buds, and even distribute them evenly on a baking sheet. Bake them for 25 minutes at 250 degrees.

Then, you can place the buds into a saucepan, along with 2 sticks (1 cup) of unsalted butter, and 1 cup of water. Simmer on low, never allowing it to reach a boil, for 2 and a half hours, before straining into a jar and refrigerating for up to 6 months.

The Best Cannabis Recipes

Now, let’s share some of our favorite recipes for making edibles. We’ll apply these recipes to both flower and oils, so that whichever you choose, you’ll be able to get started. For the most-part, these recipes can be adjusted as needed, including the amount of cannabis product that goes into each recipe.

Blueberry Muffins

These muffins come out moist, fluffy, and buttery every time, and you’re free to switch out blueberries for any other fruit you’d like – or chocolate chips.

Ingredients:

  • 1/2 cup cannabutter, softened at room temperature, or 2 droppers of any 1000mg cannabis oil
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 ½ tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1/2 cup milk
  • 1 cup fresh or frozen blueberries

Preparation:

  1. Line a muffin tin with cupcake liners, and preheat your oven to 375 degrees.
  2. Combine the butter and sugar into a large mixing bowl and beat until fluffy. Slowly add the egg and the vanilla, beating until well combined.
  3. Gradually pour in the flour, beating at the same time, followed by the salt and baking powder, until you have a smooth mixture.
  4. Beat in the milk, mixing until the batter just forms. Use a spatula to fold in the blueberries until they’re evenly distributed.
  5. Fill each cupcake liner 2/3 of the way up with the batter. Then, bake the muffins for 28-30 minutes, or until a toothpick inserted into the muffin comes out clean.

Chocolate Chip Cookies

Of course, you can never go wrong with chocolate chip cookies. That’s all the more true when you enjoy them while getting in your favorite cannabinoid at the same time.

Ingredients:

  • 1/2 cup cannabutter, softened at room temperature, or ½ cup softened, unsalted butter, plus 3 droppers of cannabis oil
  • 1/2 cup unsalted butter, softened at room temperature
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 2 ¼ cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups chocolate chips

Preparation:

  1. Preheat your oven to 350 degrees, and line 2 large baking sheets with parchment paper.
  2. Beat together the butter and the sugar until fluffy. Add the egg and vanilla extract, beating until smooth.
  3. In another mixing bowl, combine the flour, baking soda and salt. Whisk together.
  4. While beating the wet ingredients mixture, slowly pour the dry ingredients in until a dough forms.
  5. Using a spatula, gently fold in the chocolate chips without overworking the dough.
  6. Scoop out about a tablespoon of the dough at a time, placing them onto the baking sheet, spaced out by about 3 inches.
  7. Bake the cookies for 20 minutes, or until the cookies are golden-brown on the bottom.

Berry Crisp

This mouthwatering dessert lets you enjoy a bounty of fresh berries, although frozen work just as well.

Ingredients:

Berry Filling:

  • 2 ½ lbs fresh or frozen berries
  • 3 tbsp brown sugar
  • 1 tsp cinnamon
  • 1 tbsp flour

Pecan Crisp Topping:

  • 1 cup all-purpose flour
  • 8 tbsp brown sugar
  • 1 tsp salt
  • ½ cup finely chopped pecans
  • 1 cup cannabutter, chilled and chopped into small cubes, or regular butter, plus 1 dropper of cannabis oil

Preparation:

  1. Preheat your oven to 350 degrees. Grease a 9-inch pie tin.
  2. Mix together all of the filling ingredients using a spoon or your hands, until well combined. Place this mixture into the pie tin.
  3. In a separate mixing bowl, combine the flour, brown sugar, salt and pecans. Add the butter and use your hands to break it up in the flour until you get a course, pebbly texture. Pour this topping evenly over the berries.
  4. Bake the crisp for 15 minutes, or until the top is golden-brown, and you can see the berries bubbling from under the topping.

Granola

There’s nothing like some homemade granola to act as the perfect breakfast and snack in one. Enjoyed by the handful, drenched in some milk, or sprinkled on top of yogurt, all offer a mouthwatering sweet and savory treat.

Ingredients:

  • 5 cups rolled oats
  • 1 ½ cups chopped nuts of your choice
  • 1 cup dried fruit, like raisins (optional)
  • 1 cup pumpkin or sunflower seeds
  • 1 cup cannabutter, melted in a saucepan at very low heat, or 1 melted cup of regular butter, plus about 4 droppers of cannabis oil
  • 1 cup maple syrup or honey
  • 2 tsp cinnamon
  • 2 tsp nutmeg
  • 3 tsp salt

Preparation:

  1. Preheat your oven to 325 degrees, and line a large baking sheet with parchment paper.
  2. Mix all of the ingredients together in a large mixing bowl, making sure that the ingredients are blended evenly.
  3. Pour out your granola onto the baking sheet, and use a spatula to press the granola down. This will help create those yummy granola clusters.
  4. Place into the oven and bake for about 45 minutes, or until the granola is golden-brown.

Vegetable Frittata

A more savory option is a vegetable frittata, which is typically served at breakfast or brunch, but makes for a tasty and nutritious lunch or dinner as well.

Ingredients:

  • 1 dozen eggs
  • ½ cup grated parmesan cheese
  • ½ cup grated mozzarella cheese
  • 5 tbsp cannabutter, or 2 droppers of cannabis oil
  • 1 white onion, peeled and coarsely chopped
  • 2 cups fresh greens (spinach, kale, etc.)
  • 1 red bell pepper, chopped
  • Salt and pepper, to taste

Preparation:

  1. Preheat your oven to 375 degrees. Beat the eggs in a large mixing bowl before adding the cheese and butter.
  2. In a large skillet, place the butter, followed by the onion and greens, and bell pepper. Cook on low until the pepper and onion are translucent.
  3. Pour the eggs over the vegetables. Cook for about a minute until the edges of the egg are set rather than runny.
  4. Place the skillet into the oven and bake for about 10-12 minutes. Don’t let the eggs get brown on top, but make sure that the eggs are fully set by gently wiggling the skillet. Remove from the oven and slice into wedges.

Banana Bread

Banana bread is a classic dessert, breakfast, and snack, all at the same time. Sweet, rich, and satisfying, this recipe is a must-try, in our opinion.

Ingredients:

  • 1/2 cup cannabutter, softened at room temperature, or ½ cup softened butter plus 3 droppers of cannabis oil
  • 3 slightly over-ripe bananas
  • 2 large eggs
  • 1 ½ tsp vanilla extract
  • 1 cup white sugar
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt

Preparation:

  1.  Preheat your oven to 350 degrees. Grab an 8-inch loaf pan and line it in parchment paper.
  2. Mash the bananas with a fork until you get an even mixture. Add the butter and sugar, and use a whisk to mix together well. Then, our in the eggs and vanilla, and beat into a smooth mixture.
  3. Pour in the flour, salt and baking soda. Whisk until smooth.
  4. Pour the batter into the loaf pan and bake for 40 minutes, or until a knife inserted into the top comes out clean.

Brownies

Moist, rich, and chocolaty, brownies are a go-to for anyone who wants to make a delicious cannabinoid-infused dessert.

Ingredients:

  • 1/2 cup cannabutter, softened at room temperature, or ½ cup softened butter plus 2 droppers of cannabis oil
  • 1/2 cup unsalted butter, softened at room temperature
  • 1 1/2 cup white sugar
  • 4 large eggs
  • 2 tsp vanilla extract
  • 1/2 tsp salt
  • 1 cup cocoa powder
  • 1 cup all-purpose flour

Preparation:

  1. Preheat the oven to 350 degrees. Line an 8×12 baking tray with parchment paper so that the brownies don’t stick.
  2. Melt the two butters together in a saucepan on low heat. As soon as they’re melted remove them from the heat and pour them into a mixing bowl.
  3. Add the sugar to the bowl and beat on low. Add one egg at a time, followed by the vanilla, while still beating.
  4. Slowly pour in the cocoa powder, salt and flour, beating on low until a smooth batter forms.
  5. Pour the batter into the baking tray and bake for 18 minutes.

Hummus

Hummus is a quick and easy recipe that satisfies while offering loads of essential nutrients. Keep in mind that for this recipe, only cannabis oil will work, as cannabutter or similar cannabis-infused fats typically aren’t compatible.

Ingredients:

  • Juice of two lemons
  • 2 cloves garlic, peeled and crushed
  • 4 tbsp tahini
  • 2 15-ounce cans of chickpeas
  • Salt
  • 1/2 cup olive oil
  • 2 droppers of cannabis oil

Preparation:

  1. Place the lemon, garlic and tahini into a food processor. Process until the garlic is completely broken down and the consistency is light and fluffy.
  2. Add the two cans of chickpeas, after draining away the liquid in the cans. Sprinkle two pinches of salt on top. Pulse for about 60 seconds to break up the chickpeas.
  3. While the processor is still running, slowly drizzle the olive oil into the processor. Keep the processor running until the hummus becomes rich and creamy. Finally, add the CBD oil and process just long enough for it to be evenly incorporated.
  4. Remove the hummus from the food processor and serve in a bowl with pita, tortilla chips or slices of your favorite vegetables.
